Cheddar Apple Pie with Fall Leaf Crust

Hello Loves! Let me start off by saying that there is possibly nothing better then the combination of fruit, bread, and cheese (..and maybe some wine thrown in there). Also, let me tell you that I absolutely love apple pie, I make one every fall. I normally use the same basic recipe that I know and love, but this year I decided to mix things up. By adding cheese into the mix. I know, perfect.
My DIY recipe for Cheddar Apple Pie with fall leaf crust;

What You'll Need;

Crust;
2 cups flour
5 ounces cheddar
12 tablespoons cold butter
1/4 cup + 2 tbsp cold water

Filling;
6 Granny Smith Apples
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup brown sugar
2 tbsp cornstarch
1 tbsp butter

Topping;
1 egg (beaten)
3 ounces cheddar cheese shredded

Steps;

Crust;
-In a food processor shred the cheddar.
-Combine the flour and butter (cubed) with the cheese in the food processor until crumbly.
-Turn the food processor until low and pour the cold water in until a dough forms (1 or 2 min).
-On a floured surface knead into a ball.
-Cover with plastic wrap and refrigerate for 2 hrs (up to overnight).

Filling;
-Peel and cut the apples.
-In a bowl combine the vanilla, cinnamon, nutmeg, brown sugar, and cornstarch.
-Stir in the apples until completely coated.

Assemble and Bake;
-Preheat oven to 375°F.
-If refrigerated over night, set dough out on counter for 10 minutes to soften.
-Butter a pie dish.
-Separate dough into two halves.
-Roll out on a floured surface.
-Place bottom crust into the pie dish.
-Fill with apple mixture.
-Slice the tbsp of butter and place on top of apple mixture.
-Cover with the top crust.
-Press edges down and remove excess. Slice six slits into the top.
-Using the excess dough cut small leaf shapes and press around the edges.
-Cut a large leaf shape and press into center.
-Brush top of pie with beaten egg.
-Bake for 45 minutes, remove from oven and sprinkle the top with the 3 ounces of cheddar cheese.
-Place back in oven for 5 minutes.
-Let cool, slice, and enjoy with a scoop of vanilla ice cream (+ a glass of wine)!
